my godson, joe jr., stuffing himself full of cake and ice cream. he turned 2 on friday so the family celebrated w/ za and cake last night.

lemon chicken borsellini w/ spinach and feta chicken sausage, asparagus, green beans, baby spinach, shallots, garlic, diced tomatoes, lemon juice, chicken broth and a grating of fresh parm. yum!

last night’s dinner. spicy chicken quesadillas (chicken thighs marinated in cholula hot sauce and baked w/ green chiles and pepper jack cheese then cut into chunks and layered in tortillas with black beans, red pepper and lots more pepper jack cheese) and refried beans w/ green chiles. there was a spinach salad to go with, but i ate that long before this pictures was taken. ;)
